This was last Saturday's stay-in dinner date with my sister. Zero fussing about. All under 15 minutes to prepare. Probably my greatest struggle was opening the bottle of Tostitos. I swear, one of my biggest fears is being a contestant on Minute To Win It and face the million dollar challenge of having to open a bottle of anything.
Please don't judge me based on my fears. I have substance, pinky swear.

Anyway, everyone loves tacos. I actually gasped in judgment when one of my clients at work asked me what Mexican food is. I wanted to cry.
This is the lazy non-domesticated version. If you have time on your hands and find cumin easy to acquire, then go the distance!

Our more than generous spread. How many mouths was I feeding? We still have half a bag of Tortilla chips, 8 taco shells and a Tupperware full of minced beef. Friends, come over for leftovers, please! |
A) TACOS
*yields probably 10-12 tacos
- 300g of minced beef
- 1 pack of taco mix (I used Old El Paso's)
- half a large red onion
- 4 large jalapeños (sliced)
- 2 medium sized tomatoes (seeds removed then diced)
- 1 ripe avocado (diced/mashed)
- shredded cabbage (you may opt for lettuce but like I said, it's practically useless a vege)
- cheese (I used cheddar)
- hot sauce (I used Sriracha
- taco shells (hard or soft, both need to brown a bit in the oven before serving)
* yields more than enough
- a bag of your favourite tortilla chips (I used just plain corn ones)
- salsa (I used store-bought ones: Tostitos hot)
- cheese
- beef (optional)
Homemade "guac" | diced tomatoes |
THE GREATEST HOT SAUCE IN THE WORLD. |
- sauté your red onions on medium heat in a frying pan until they're caramelised
- throw in your minced beef then add the taco mix
- brown evenly
- throw in the jalapeños
I really like chili, if it weren't obvious enough. |
YUMS |
I'm thinking of making Pad Thai this weekend. Or if I go over my parents', I'll ask my mum to make some for me. You know, whichever pans out better. We shall see.
